Appellation: Valpolicella DOC Ripasso Organic wine certified by ICEA – Reg. CEE 2092/91

Producer: Vin & Organic Products Srl – Pescantina (Verona) Italy

Vineyard area: The vineyards of the Valpolicella are located in the hills to the north of Verona. The soil is comprised of clay that is calcareous, dry and stony. The vines are cultivated in “pergola trentina” or trellis. A cover crop of grass is used in the vineyard to control soil erosion.

Grape Variety: Corvina (60%); Rondinella (35%); Molinara (5%).

Vinification: The fermentation of must with its own grape skins takes place in a vat of vitrified cement. Bottling is preceded by refrigeration and filtration.

Average age: 5 years

Alcohol: 13.5 – 14.5% by volume

Tasting Notes: The Valpolicella DOC Ripasso is a lovely, medium dark ruby color. Reminiscent of a Beaujolais Village, the clean, fresh, bright aromas and flavors hint of candy apple, cherry, raspberry and spice. It is balanced, elegant, medium-bodied, fruity and flavorful, with a lingering, fruity, expansive finish. This is a very attractive wine.

Matching with Foods: Matches well with a wide variety of dishes including poultry, meat, stews, cheese, risotto with mushrooms, and pasta.
Serve at 18-20° C/64-68 F.
